600g (approx 3) Granny Smith apples - peel, core & slice thinly.
4 Tablespoons Caster Sugar
Crumble
225g Plain Flour
105g SR Flour
225g Brown Sugar
2 tsp Ground Cinnamon
2 tsp Ground Ginger
250g Salted butter - cubed
Custard
15g Cornflour
15g Custard Powder - Nurses
55g Caster Sugar
500g Full Cream Milk
5g (1 tsp) Vanilla Extract
300g Cream
1 Egg Yolk
Method
Pre heat oven 180 fan forced
Add rhubarb & apple to a large glass dish and microwave on high for 5 mins.
Stir & microwave for a further 5 mins.
Add caster sugar, stir through and pour mixture into a large baking dish.
Process all crumble ingredients (I use a Thermomix) 20 sec/speed 6.
Sprinkle over fruit mixture.
Bake 30 mins or until fruit is bubbling around the edge.
Add all custard ingredients to Thermomix and cook 7 min/90 deg/ Speed 4.
Serve a nice big scoop of Apple & Rhubarb Crumble with a generous pour of hot custard (and if you’re feeling like really treating yourself add a scoop of vanilla icecream!!)
