Fruit & Nut Pudding with Bailey’s Custard

This is my mum’s additional to our Christmas Table. It is everyone’s favourite and it also adds that touch of Traditional Christmas to the day.

Ingredients

2 Cups of S.R. Flour
200g Cadbury Roast Almond Chocolate – chopped
1kg Sunbeam Gourmet Mix Fruit (with Figs and Cranberries)
2 Cups of Strong Black Coffee
1 Bottle Bailey’s Flavoured Custard

Method

  • Preheat oven to 170°c
  • Soak dried fruit in coffee overnight
  • Mix in the flour and chopped chocolate
  • Pour into a lined 20cm cake tin
  • Bake for 40mins until skewer comes out clean
  • Slice and serve warm with Bailey’s custard.
