Penne Alla Vodka Pasta with Prawns

This Penne Alla Vodka Pasta with Prawns Recipe by @cookingwithbec_ is an absolute keeper!!!!
I made a few shortcuts as I decided to make it last minute but OMG it is good πŸ™ŒπŸΌπŸ™ŒπŸΌπŸ™ŒπŸΌ

Ingredients

2 Tblsp butter
Drizzle Olive oil
2 x 200g packets raw garlic prawns (I used Catalanos)
1 Tblsp Chopped Garlic
120ml Vodka
2 x 390g Tubs Marinara Sauce (sea fresh) OR homemade Napolitana Sauce.
600ml Cream
2 tsp salt
1 x 220g jar Always Fresh Sundried tomato strips DRAINED.
1/2 cup finely grated Parmesan
Cheese.
3 Spring onions - finely sliced
1 box Barilla Penne Pasta

Method

  • Put your water on to boil and when boiling add 1 tsp salt.
  • Meanwhile, heat butter and oil in a pan.
  • Add prawns and garlic.
  • SautΓ© prawns until no longer translucent (30 sec- 1 min)
  • Remove prawns and set aside leaving garlic in the pan.
  • Add vodka, bring to a simmer and reduce.
  • Add sauce, cream & salt.
  • Bring to a simmer.
  • Water should be boiling now, add penne and cook for 13 mins.
  • When Penne has 5 mins to go, add prawns back to the pasta, along with sundried tomatoes, parmesan & spring onions.
  • Simmer until the pasta is ready.
  • Drain pasta, add to the sauce and toss through to combine with the sauce.
  • Serve with extra parmesan & chilli.
