South Pacific Sausage Rolls

The best sausage roll recipe.

Ingredients

1kg Sausage Mince
2 brown onions-grated
1 kg sweet potato-peeled and grated
2 tsp ground coriander
1 tsp mild curry powder
2 tsp salt
2 eggs
7-8 sheets BORG’S puff pastry

Method

  1. Preheat oven to 180 fan forced.
  2. Separate and lay out puff pastry sheets on the bench.
  3. Combine sausage mince, grated onion, grated sweet potato, ground coriander, curry powder, salt and eggs in a stand mixer with the paddle attachment if possible OR in a large bowl, combine very well with your hands.
  4. Using a sharp knife, cut each puff pastry sheet in half.
  5. Spread mixture down the centre of each half of pastry in a log.
  6. Roll each pastry half to enclose the filling, ensuring pastry is sealed.
  7. Cut each log into 4 pieces (you can transfer to flat container/tray, cover and freeze at this point if you don’t want to cook them all.
  8. Line oven trays with baking paper.
  9. Place sausage rolls in a single layer onto oven tray.
  10. Bake 40 mins until golden.
