The Best Ever Anzac Cookies ??

Anzac Biscuits

Ingredients

300g plain flour
180g rolled oats
110g desiccated coconut
60g shredded coconut
200g brown sugar
110g caster sugar
250g salted butter
4 Tablespoons golden syrup
4 Tablespoons water
1 tsp bicarbonate of soda

Method

  1. Preheat oven to 160 deg fan forced.
  2. Line 4 baking trays with baking paper.
  3. In a large bowl combine flour, oats, coconut, and sugar.
  4. In a medium sized pot, melt butter, golden syrup, and water.
  5. Stir in bicarbonate of soda and mix until foamy.
  6. Remove from heat.
  7. Add the dry mixture to the wet mixture and mix thoroughly.
  8. Using damp hands (this helps keep the balls together) roll into tablespoon size balls and flatten to 1cm thick using your palms.
  9. Place 5cm apart onto the lined trays.
  10. Bake 2 trays at a time for 7 minutes, then switch the top and bottom trays around and bake for a further 7 minutes.
  11. As soon as they come out of the oven, flatten the biscuits (they are hot so you can use a mug to do this)/
  12. Cool on baking trays for 5 mins, then transfer to a wire rack to cool completely.
  13. Repeat with the remaining 2 trays.
