Hot Cross Buns

I can’t tell you how many batches I’ve made to come up with this recipe!!! More flour, less flour, more spice, less fruit you name it ha ha!!

I promise these will become your go to recipe year after year and your house will smell wonderful as you proudly pull these out of the oven for your family and friends.

Ingredients

60g Salted Butter
375g Milk
1 Egg
1 Tsp Salt
100g Castor Sugar
2 Tsp Bread Improver
600g Baking Flour (Wallaby's)
2 Sachets of Yeast (Tandaco)
260g Sultanas
4 Tsp Mixed Spice
4 Tsp Cinnamon

Cross

4 Tbpn Flour
4 Tbpn Water

Glase

2 Tbpn Water
2 Tbpn Castor Sugar

Method

  • Combine milk and butter in a glass jug and microwave for 1 minute.
  • Add the warm milk and butter to your mixer with the dough hook attached.
  • Add all remaining dough ingredients in order and mix on medium speed for 12 minutes.
  • Keep mixing until dough pulls away from sides and the bottom of the bowl and forms a ball.
  • Spray bowl with oil, place in dough and cover loosely with wrap. Place in the microwave or oven with a mug of boiling water. Close the door and prove for 1 hour (or until doubled).
  • After one hour, lightly flour your bend and tip dough on top. Lightly knead to know the air out.
  • Divide into 15 x 85g pieces (use scales).
  • Spray a lamington tray with oil.
  • Shape dough into round balls (pull all edges into the middle, flip dough over and using one hand swivel the dough around and around until a nice smooth ball is formed).
  • Place onto the prepared tray in 5 rows of 3.
  • Place tray back into the oven to prove with another mug of boiling water for 30 minutes.
  • Preheat oven to 180°c.
  • Once dough has proved and buns are nice and puffy (should be touching) combine the flour and water for the crosses and whisk to combing to a paste. Pipe the crosses.
  • Bake buns for 25 minutes.
  • Make the glaze by combining the water & sugar in a glass jug and microwave for 40 seconds. Stir. Brush the buns with the syrup as soon as they come out of the oven.
