2 packets chicken breast (approx 1kg) cut in 2 or 3 pieces horizontally and banged out with a mallet if too thick.
Egg mixture
6 eggs + a dash of water whisked together.
Crumb Mixture
500g dried breadcrumbs
1 tsp garlic powder
1 tsp onion powder
150g finely grated parmesan
Half fill a 1/3 measuring cup with dried parsley
3 tablespoons Maldon Sea Salt flakes.
Combine.
Method
- Add all chicken to the egg mixture to “marinate” whilst you prepare the crumb mix.
- (Can do in advance if you like also)
- Dip each side in crumb mix and put on another plate ready for frying.
- Heat 2-3 cm light olive oil (I use cobram estate) and fry cutlets each side until golden and immediately onto a paper towel lined tray to absorb excess oil.
- Arrange on a platter and serve.
