Tuna Patties

Ingredients

1kg bag Birdseye frozen mashed potatoes- cooked in the microwave according to the instructions on the bag(or can use homemade but this is the best I promise ☺️)

2x 425g tins Sirena Tuna -Italian style, drained.

4 spring onions- finely sliced

120g finely grated Parmesan cheese

200g frozen peas and corn (cook in the microwave in a casserole dish with a lid)

CRUMB

To coat, set up 3 shallow bowls and add to each

Panko bread crumbs

6 eggs, lightly beaten

Plain flour

Method

  1. Mix all ingredients together in a large bowl.
  2. Using an icecream scoop, take a scoop of mixture and form into a flat disc.
  3. Toss in flour to coat and shake off excess.
  4. Dip in egg.
  5. Toss in panko crumbs.
  6. Place Patties on a large tray.
  7. Refrigerate 30-60 mins to firm up mixture.
  8. Shallow fry until golden on each side.
  9. Place on paper towel to absorb excess oil.

Serve hot with tomato sauce or lemon wedges (or both😋)

Or cold (perfect for lunchboxes)
